What we think of as waste
The parts of vegetables we normally throw away are laden with nutrients; potato peelings, for example, are packed with Vitamin C, fibre and iron. There is no good reason to discard these parts if we can use them.
Being inventive
Creating something in unexpected ways

– Pickling root stems
– Simmering up some hearty stocks, soups and stews
